Investigate the impact of various postharvest treatments on the quality of olive oil, with a specific focus on understanding how different cultivars respond to distinct treatments.<br>Chapter 1: Effects of pre-processing cooling of harvested olives on oil composition and quality parameters in two different genotypes.<br>Chapter 2: Postharvest ethylene application on olive fruit affects olive oil composition in a genotype-dependent and ripening index manner.<br>Chapter 3: Ozone treatments of olives and transition metals effects on oil composition, oxidation, and stability. <br>
